Defrost one sheet of Jus-rol frozen puff pastry, score a border approx 1 cm in from the edge and prick the centre a few times with a fork. Bang in the oven for about 10 mins, meanwhile slice some mozzarella and tomatoes. Remove the pastry from oven and press down the centre part with a spoon, layer on the filling, drizzle with olive oil and season with salt and pepper. Bung back in the oven for a bit longer, can't remember how long as I'd had a few to drink by then. Remember to remove from oven before it burns, garnish with a few basil leaves et voila! Serve with salad, new spuds and loads of wine.
If you want to impress your friends, do NOT serve on a baking tray like I did!
This looks really yummy Fiona and oddly enough I make the same thing for lunch sometimes and also with oven roasted veg instead of the tomato too.

I make the same tart, but I use goatcheese with thyme, black pepper and lemon juice instead of mozzarella - YUM! I'll have to try your version!
